His pastry, made up of six Christmas balls aligned on transparent bases, as if levitating, reveals the silhouette of a Christmas tree thanks to a play of shadow and light. On the composition side, originality and audacity are also present. The six chocolate-coated spheres contain a citrus and coffee mousse made in cooperation with the Bordeaux roaster “L’Alchimiste”.
