For this second week, we have decided to make you discover or rediscover few of our signature dishes. Let’s begin gently with our caouley mill smoked trout, cucumber salad with herbs and trout eggs. Then we go on with our tender pork belly from the Ferme d’Elizaldia, Pays Basque, casserole of spring vegetables. It is unthinkable to end a delicious meal without a sweet note which is why we are proposing to perfect the experience our salad of red fruits, verbena juice, pine nut crumble.
